Beef chicken fish lamb etc. Those are all pretty common but have any of you tried any meats that are considered exotic or not the norm? What meat would you want to try in your life?

Depends on what you call exotic. Nothing from Africa or anything like that.
Elk, Deer, raccoon, snapping turtle, pronghorn antelope, Bison, Mountain Goat, Pheasant, ruffed Grouse, Sharp tailed Grouse, Duck, Goose, Hungarian Partridge, Wild Turkey, Rabbit, Squirrel, Moose.... I think that's it? might have missed a couple.
While many of these are delicious if cooked properly, I would have to say my favorite was Elk. Unbelievably delicious. The one constant on cooking wild game is to NOT over cook it as it is very lean. slow cook is the way to go.
Most of the birds are due to my bird hunting but many others were at Wild game feeds.

Cottontail rabbit, Gray squirrel, raccoon, quail ( Bobwhite ), dove, duck, crawfish, bullfrog legs, snapping turtle, softshell turtle, crayfish, grasshoppers, deer, and sea gull.

I've had crawdads as they called them in Missouri, Dove horsd'oeuvre Yummy !!. Oh and if you want to include seafood/fish I've eaten as my late aunt lived just outside of Miami and I used to go visit during spring break. Shark, Sail fish, Dolphin (the fish not the mammal) Catfish, Lobster.

I grew up out in the country in N.C. where we had goats, my brother's horse, a milk cow, chickens, and turkeys. Our neighbor had lots of cows and hogs. So, I grew up eating goat pretty often. Catfish, of yes!!! ( I love lobster too ). Oh! edit and add: fried green tomatoes and poke salad ( but that ain't meat ).

A friend and I found a seagull with a broken wing, so we gave it a quick merciful death; wrung its neck. So my Dad took it and that evening, he was grilling ( can't remember whatall now, but he grilled the seagull along with the rest. My buddy Rick and I ate seagull. My Dad had made a rule; you kill it you eat it. Kept me from shooting at noises. Anyway... seagull cooked, looks like chicken, tastes like fish.

Reminiscing; I remember, as a kid at a drive-in movie, my oldest brother had bought some pizza ( in those days pizza pie ). I had no idea what he was eating but it smelled horrible. That was my introduction to pizza. I had my first taco in Mexico and my first Ramen in Okinawa.
